The choice, implementation and monitoring of freezing and defrosting methods are of paramount importance in the quality control of raw materials and processed food products. With traditional defrosting methods high drip losses may result from lengthy defrosting times, causing changes in the product texture and leading to a significant economic loss.
On the contrary, the process speed and uniformity of the RF defrosting method introduce a number of benefits, including also the minimisation of the drip losses, thus helping to increase the yield and preserve at best the product quality.
We have developed a simple tool to estimate the payback of the investment in a STALAM defrosting machine, taking into consideration just the advantages related to the reduction of drip losses.
