Once more, a first-class company in the seafood industry has successfully adopted Stalam’s radio frequency (RF) rapid defrosting technology. The company, involved in the processing of tuna and swordfish for sale to restaurants and retailers, found the RF technology to be the best solution to defrost its products while preserving their original quality.
The introduction of the RF technology was aimed to improve operational efficiency, reduce process times and ensure uniform defrosting while maintaining the sensorial and nutritional properties of the raw fish.
Seafood processing companies face stringent requirements for on-time deliveries and high-quality standards. Traditional defrosting processes (e.g. water bathing) are time-consuming and energy-intensive and both these shortcomings can also compromise the integrity and healthiness of frozen raw fish other than causing high production costs.
The company was looking for a solution that would guarantee rapid and effective defrosting of tuna and swordfish loins to increase throughput at its production facility, while preserving the superior quality of its raw materials – a must for its customers.
The RF equipment supplied by Stalam, with a maximum output power of 40kW, brings the temperature of approximately 500-600 kg/h of fish loins from storage at -18°C to the ideal temperature (-2/-3°C for swordfish and -4/-5°C for salted tuna) required for further processing or portioning and re-packaging before delivery in just 25 minutes. The defrosting process is uniform and gentle, preserving the product’s texture without the risk of excessive thawing or undesirable drip loss.
The company could thus increase production capacity and reduce costs while better meeting market demands with a more sustainable and efficient process.
